Temps are dropping, the leaves are turning, and suddenly all the moms are clutching a mug of something hot like it’s life support. There’s something in the air that makes soup feel like the sixth love language.
Let’s be real, soup is basically a hug in a bowl, it’s cozy, forgiving, and makes it look like you put in a ton of effort when you definitely didn’t.
Here are five go-to soups that will win you points with your family, friends, and even yourself on those nights you really don’t want to cook.
1. Lazy Mom Chicken Noodle
A pre-cut mirepoix from Trader Joe’s and a rotisserie chicken will be your best friends here. Sauté your veggies until tender, then add shredded rotisserie chicken, boxed chicken broth, egg noodles, and frozen veggies. Top with fresh parsley and your kids will promise that you boiled a whole bird for hours.
2. Trader Joe’s Hack Tomato Basil
Buy two cartons of TJ’s Tomato & Roasted Red Pepper Soup. Add a splash of heavy cream, a sprinkle of garlic powder, and a few fresh basil leaves. Serve it with some gruyère grilled cheese cut diagonally, because that’s the law. Boom, pantry soup turns into a bistro meal in 30 minutes.
3. Autumn Butternut Squash Bliss
Pre-cut (no judgment here) butternut squash gets roasted at 425 degrees with onion and garlic. Toss it in the blender with vegetable broth and a pinch of nutmeg. Top it with roasted pumpkin seeds and creme fraiche if you’re feeling Insta-worthy. It tastes like fall gave you a hug.
4. Zuppa Toscana
Here’s the scoop on my absolute favorite 30-minute soup. It may be the most labor-intensive on this list, but trust me, it’s worth it. This Zuppa Toscana (even though “Zuppa Toscana” is a made-up creation from Olive Garden) is my literal go-to soup. It’s impressive to host guests on a Friday night. Bake up some mini baguettes, and your guests will think you slaved away.
5. Clean Out the Fridge Soup
This is by far my favorite soup because it means that no vegetable is left rotting in the back of my fridge. Lonely carrot, in the pot. Half an onion, in the pot. Sad zucchini? In the pot it goes. Even leftover rice can live together happily once simmered in broth, add some herbs, it’s up to you! No one will know, and you’ll feel like a genius.
Cozy season should be exactly that: cozy. You should be on your couch reading while dinner takes care of itself. With a little broth and a few shortcuts, you can win fall dinners without breaking a sweat. In fact, you can find even more soup recipes here.
