Simplifying Dinner: 30-Minutes Meals

Chicken Pot Pie- 30 minute meals Between all the organized chaos that is ensuing around us this month, it can feel like our heads are in a tangled blur of holiday lights when the kids start uttering those dreaded words, “Mom, I’m hungry!” 

In the midst of all the other things going on, sometimes it is a real struggle to get a hot meal on the table. Here are my go-to fast and easy 30-minute meals that guarantee a headache-free evening.

1. Sloppy Joes

Sloppy Joes will give you all the nostalgic feelings of your childhood and give you the ease of a meal you probably already have the ingredients for in your fridge. They’ll be ready in 20 minutes, and you can pop some fries in the air fryer to round out the meal. You can even hide some veggies if you chop them up finely enough! I love this recipe from the Pioneer Woman.

2. Chicken Pot Pie

Homey, comforting, and all-around delicious is exactly how I feel about chicken pot pie. This recipe is made even easier through the use of a rotisserie chicken. I love to top mine with homemade drop biscuits. This recipe is done on the stovetop and absolutely delicious.

3. Shrimp Scampi

Garlicky and delicious, shrimp scampi will forever be one of my favorite pasta dishes. (Also because my kids will devour any dish with pasta in it, but more on that another time). Shrimp is the leanest protein you can find and cooks almost impossibly quickly, leaving this dish in your weeknight repertoire.

4. Fish Tacos

My kids will eat anything in a taco. Literally anything, and I love that these fish tacos are done in a literal flash and won’t leave me weighed down.

5. Crockpot Butternut Squash Soup

While this one requires some planning, the prep work will be less than 30 minutes, and you’ll arrive home to a hot, delicious meal. This soup will leave you feeling warm and cozy in a flash!
